Roasted Potatoes with Dill Dressing

What a lovable dish.

I mean, first – there’s potatoes. Not only roasted, but broiled, so some of them have those crispy burnt edges. You know the really good breakfast potatoes that are done-done and crispy? Like those.

Plus, these potatoes are topped with herbs and green olives to elevate this simple dish.

Dill and cilantro combine with olive oil to coat roasted potatoes.

Ok, there's one more benefit. This dish can go with so. many. things.

Try these potatoes alongside any summer grilled vegetables or meats, or with roasted chicken.

A serving of these herby potatoes would pair nicely with a cheese quiche or as an alternative to mashed potatoes.

The herbs and olives are well-matched with other Mediterranean dishes, or as a breakfast potato to start your day with an herby zing. They can even stand out on their own as an appetizer, just cut into larger chunks and serve on a platter with toothpicks.

I made these potatoes as a side to garlicky chickpeas when two friends visited from Phoenix and joined me for a meal. After dinner they commented “I don’t know where to find food like this back in the valley.”

Food that one isn’t sure where to find again unless they come back to my house for dinner? Now that’s a big compliment.

Roasted Potatoes with Dill Dressing

These roasted Yukon Gold Potatoes in an herby dill dressing are an easy to prep side dish that can also stand in as an appetizer. A sure hit with potato fans!

Ingredients

  • 6 Yukon Gold potatoes
  • 3/4 cup finely chopped fresh dill
  • 1/4 cup finely chopped cilantro
  • 1/2 cup roughly chopped green olives
  • Juice from half of a lemon
  • 1/4 - 1/3 cup olive oil + more for roasting
  • Salt and pepper

Instructions

  1. Heat oven to 400 degrees
  2. Wash and dry potatoes, then cut into large, bitesize chunks
  3. Toss potatoes with olive oil, plus salt and pepper then add into a large baking pan in one layer
  4. Roast in the oven for 30 minutes, turning in the pan at least once halfway through.
  5. Once completely cooked, turn on broiler.
  6. Broil for another 6-8 minutes so potatoes are lightly browned on top.
  7. While potatoes are roasting, prepare the dill dressing.
  8. Finely chop all herbs and combine in a large mixing bowl.
  9. Juice lemon, and chop olives, then add to the mixed herbs.
  10. Whisk in olive oil and stir to combine completely.
  11. Season with salt and pepper to taste.
  12. Once potatoes are done roasting, add to dill dressing and stir to coat while potatoes are still hot.
  13. Adjust with salt and pepper if needed.
  14. Potatoes can be served hot out of the oven or at room temperature. If serving cold, remove potatoes from the fridge for 30 minutes before serving to thin the dill dressing and warm to room temperature.
