I can get bored by breakfast as unlike other meals, I tend to gravitate to the same things – oatmeal with a rotation of toppings, yogurt with honey and fruit – all tasty – but it needs to be shaken up. My criteria for breakfast (and for most of us, I'm guessing) are different than dinner.
First, it involves minimal cook / prep time
Second, needs to go well with coffee
This breakfast switches things up and adds some interest. Admittedly, it does add some prep time compared to other weekday breakfasts, but why not spare 12 more minutes to start the day off with something new to break the routine? Just don't hit the snooze!
Savory breakfast bowl, lunch option, or even light dinner
