Maple Walnut Cookies

these holiday cookies make for a lovely transition from fall to winter with the combination of maple, walnuts, and oats

Ingredients

  • 1 1/2 cups oatmeal
  • 1 1/3 cups flour
  • 3/4 cup shredded coconut
  • 1 cup roasted chopped walnuts
  • 2/3 cup packed brown sugar
  • 1/2 cup + 2 TBSP unsalted butter
  • 5 TBSP maple syrup
  • 1 tsp baking soda
  • 1 tsp maple extract
  • 1/2 tsp salt

Instructions

  1. Heat oven to 300 degrees and line two baking sheets with parchment paper (if you use paper for baking to reduce sticking)
  2. If roasting walnuts yourself, place walnuts on a baking sheet and roast in oven about 10 minutes, checking and tossing every 3-4 minutes, until walnuts are slightly roasted, golden, and fragrant
  3. While roasting walnuts, combine butter and maple syrup in a small saucepan over low heat. Heat until better melts, then remove from heat and set aside
  4. In a large mixing bowl, combine oatmeal, coconut. flour, salt, and brown sugar
  5. In a small bowl, combine baking soda with 2 TBSP boiling water. Stir, and immediately add to melted butter mixture, stirring constantly for a minute. The mixture will be a little frothy.
  6. Add maple extract to butter mixture, then slowly pour into the oat mixture, stirring to combine
  7. Add walnuts and stir to combine all ingredients
  8. Form dough into about 1 1/2 inch balls to make approximately 24 cookies
  9. Place on cookie sheets, about 3 inches apart. Flatten each ball slightly
  10. Bake until golden brown and set, about 20 minutes
