Ingredients

  • 1 bunch large carrots - can use any colors
  • 1 handful or italian parsley
  • 2 TBSP olive oil
  • juice of one lemon
  • juice of 1/4 orange
  • salt and pepper to taste
  • optional - any serving sauces or condiments you like for dipping

Instructions

  1. Wash and scrub carrots thoroughly – you won’t be peeling them so make sure to scrub off any dirt. The skins have some of the best taste!
  2. Trim carrot tops, then toss carrots in olive oil and season with salt and pepper
  3. Wash parsley and shake out water from leaves, drying with a paper towel
  4. Coarsely chop parsley
  5. Prepare grill - carrots can be grilled along with any other foods you are grilling
  6. Grill carrots until tender and carrots show some grill marks (time will vary depending on grill you are using)
  7. Once tender, remove from grill and set aside on a serving platter
  8. Drizzle with citrus, sprinkle with chopped parsley, and add any flaky salt if needed
  9. Serve on their own or alongside any sauces or dips you choose
